Summer on a Plate: Sweet Summer Salad

This vibrant salad is perfect for a gorgeous summer's day. Nutrient dense, gluten-free, deliciously satisfying with chunks of protein rich tofu, drizzled with a little balsamic vinegar & maple syrup, adding a subtle tone of sweetness and those fabulous sweet fresh fruity notes. We hope you enjoy it as much as we do 💚


  • 1 pack tofu - diced
  • a drizzle of olive oil 
  • 1 tbsp balsamic vinegar 
  • 2 tbsp maple syrup 
  • 1 pack mixed salad - rinsed & drained 
  • 1 avocado - sliced
  • 1-2 sweet ripe nectarines - sliced
  • handful of grapes - halved
  • 1 lime - sliced
  • basil-infused olive oil
  • a sprinkle of dried basil, cress & pumpkin seeds.


Drizzle some olive oil in a non-stick pan. Add the diced tofu, cook on a medium heat. Gently toss, ensuring all sides are cooked evenly and are golden brown. Add the balsamic vinegar and maple syrup, cook for another 2 mins, allowing the flavours to infuse. Remove from heat, pop on to a sheet of kitchen roll and allow to cool.

In a serving bowl pop the mixed salad greens, arrange the slices of avocado and nectarines. Add the grapes and tofu chunks. Squeeze some fresh zesty lime juice. Drizzle some basil infused olive oil. Sprinkle some dried basil, cress and some crunchy pumpkin seeds and enjoy 💚
