Raspberry Victoria Sponge Cupcakes

This recipe only requires a handful of ingredients. It creates 6 delicious muffins for you and your family and friends to enjoy.

Method

  1. Preheat the oven to 180 fan

  2. In a large mixing bowl, add the mix along with all the wet ingredients. Mix together until all combined.

  3. Evenly distribute the mixture into 6 muffin cases.

  4. Place in the oven for around 25–30 minutes, until they have turned golden brown.

  5. Leave to cool for 20 minutes before decorating.

  6. Cut out a small hole in the centre of each muffin and place a tbsp of jam in the middle.

  7. Top with some Vanilla buttercream and add a strawberry on top for the finishing touches
