Ingredients

Creative Nature Victoria Sponge Cake Baking Mix (which you can win here)

130ml plant-based milk

60g vegetable oil

2tbsp lemon juice

Raspberry jam

Vanilla buttercream (vegan)

150g strawberries
Method

Preheat the oven to 180 fan

In a large mixing bowl, add the mix along with all the wet ingredients. Mix together until all combined.

Evenly distribute the mixture into 6 muffin cases.

Place in the oven for around 25–30 minutes, until they have turned golden brown.

Leave to cool for 20 minutes before decorating.

Cut out a small hole in the centre of each muffin and place a tbsp of jam in the middle.

Top with some Vanilla buttercream and add a strawberry on top for the finishing touches
