These fluffy, lightly spiced carrot muffins are the perfect cosy treat - naturally sweetened with bananas and sultanas, completely dairy-free, and made without a drop of oil. They’re soft, hearty, and just sweet enough to pair beautifully with your morning coffee (or afternoon cravings).
Ingredients
Dry Ingredients

2 cups oats, ground into flour

½ tsp bicarbonate of soda

1 tbsp baking powder

1 tbsp cinnamon

1 tsp mixed spice

2 tbsp ground flaxseed

2 tbsp sultanas or raisins

4 medium carrots, grated
Wet Ingredients

2 ripe bananas
-
1 tbsp plain plant-based yogurt

1 tbsp apple cider vinegar

70ml plant-based milk

Method

Prepare the oat flour
Add the oats to a blender and blitz until they form a fine flour. Transfer to a large mixing bowl. Skip this step if you already have oat flour at home! -
Combine the dry ingredients
Add the baking powder, bicarbonate of soda, cinnamon, mixed spice, flaxseed, sultanas, and grated carrots to the oat flour. Mix well. -
Blend the wet ingredients
In the same blender (or using a fork), blend the bananas, plant-based yogurt, apple cider vinegar, and plant-based milk until smooth. -
Create the batter
Pour the wet mixture into the dry ingredients and fold gently to combine.
If the batter looks too thick, add 1-2 tbsp more milk. Avoid overmixing - a few small lumps are fine. -
Fill your muffin cases
Spoon the batter into an ungreased silicone muffin tray or lined muffin cases.
Sprinkle pumpkin seeds on top for crunch. -
Bake
Bake at 190°C for 25 minutes or until the tops are golden and a toothpick comes out clean. -
Cool completely
Allow the muffins to cool fully before removing from the pan.
(They firm up as they cool - worth the wait!)
Storage
Store in an airtight container at room temperature for up to 2 days.
